In the terminology of Egg Culture, this state is called “Emptiness”. The energy (Egg Qi) has left the form. The texture falls apart in the mouth, leaving only a chalky trace and disappointment. Consuming such a product carries no aesthetic value.

The search for perfect pastiness is a dialogue with time. The water temperature, the initial temperature of the egg itself, the thickness of the shell—every variable matters.
